Will a 1998 Roadtrek 200 Versatile with diesel engine haul a Miata?

The curve weight of a Miata is about 2500 pounds, so there should be no problems towing it with your RoadTrek.

Towing with a Roadtrek

I have personally towed a 3000lb vehicle extensively with my 1998 Roadtrek Versatile 200, a one time trip towing a trailer with a Kubota tractor and other eqipment for a total weight of over 6000lbs from Sault St. Marie to Kingston Ontario (one flat tire on the trailer!) and currently tow a smaller trailer loaded with equipment and tow kayaks. My Roatrek is a 1999 model and I have never had any malfunctions of the engine or running gear. I think it was designed to pull up to 7500lbs with the diesel option... so go for it. I know of a couple from Kingston who are towing a Honda CR-V which I believe exceeds the weight of your Mazda!!!
