Grilled Veggie Stuffed Eggplant

Easy to make, and yummy!

Serves: 8


2 large eggplants, 1lb. each, sliced into 1 inch thick rounds
2 large onions and tomatoes, thick sliced for grilling
2 cups of grated sharp cheddar cheese
¼ cup olive oil
½ teaspoon garlic powder
salt and pepper to taste
round toothpicks

1. Preheat Grill to medium.

2. Cut a slit into each 1 inch thick slice of the eggplant rounds, making a pouch for stuffing.

3. Lightly oil grill, and brush each side of the eggplant rounds with oil, and place eggplant on the grill for 6-8 minutes. While grilling eggplant rounds, brush each side of the onions and tomatoes slices with oil, and place on the grill for 4-6 minutes, until done. Remove all.

4. Place equal amounts of cheese, onions and tomatoes, and spices into each pouch of the eggplant and secure the ends with a toothpick.

5. Lightly oil stuffed eggplants, and salt and pepper to taste, return to the grill for 5-7 minutes until tender and lightly browned.

6. Place eggplants on a plate, top with grated cheese, and drizzle with your favorite dressing.

Also try cornbread stuffing, and other veggies.
