Stuffed Bacon and Cheese Zucchini

Stuffed Bacon and Cheese Zucchini

Serves 6


2 pounds zucchini, halved
2 cups dry bread crumbs
4 slices bacon, cooked and chopped
6 ounces shredded Cheddar cheese
1/4 cup minced red onion
1 tablespoon chopped fresh parsley
1/4 cup grated Parmesan cheese, divided
2 eggs, beaten
1 tablespoon olive oil
2 tablespoons butter
1/4 teaspoon garlic powder
Salt and pepper to taste


1. Preheat oven to 350 degrees F

2. Add zucchini in a large pot of boiling water. Cook until tender, 12-15 minutes, drain.

3. Scoop out the flesh of the zucchini, making a hollow log.

4. In a medium bowl combined zucchini flesh, bread crumbs, onion, Cheddar cheese, parsley, salt, and egg.

5. Fill zucchini logs with mixture. Dot tops with butter and sprinkle with Parmesan cheese, seasonings and olive oil.

6. Bake in preheated oven for 35 minutes. Remove.

7. Top with cooked bacon and the other half of Parmesan cheese.
